Ingredients

  • 1 extra-large egg
  • 1 cup milk
  • 4 tbsp sugar
  • 3 tbsp unsweetened cocoa powder
  • 1/2 cup+1 tbsp flour
  • 15 strawberries
  • mint
  • chocolate syrup
  • 1/2 cup heavy cream
  • 1/2 tbsp sugar

Instructions

  • Combine the milk and sugar and microwave until warm.
  • Whisk the egg in a bowl and mix in the milk & sugar mixture in thirds.
  • Sift in the cocoa powder and flour and mix.
  • Let the batter sit in the refrigerator for 2 hours.
  • In the meantime, whip your cream and slice the strawberries.
  • Pour a thin layer of batter onto a heated frying pan and cook until both sides are dry.
  • Repeat until all the batter is cooked.
  • Put a sheet of crepe onto a plate, followed by whipped cream and then the sliced strawberries. Repeat until you’ve used up all the crepes and strawberries.
  • Top with more strawberries, a sprig of mint and chocolate.
